Treat of the Week: A Lovely Labor Day

I work hard.  I needed a break.



We celebrated Labor Day this past weekend with the perfect end-of-Summer meal. My mother and father roasted two lovely marinated chickens (stuffed with fresh herbs) on the rotisserie on their new gas grill. The birds rotated to perfection, casting their tasty juices over lovely potatoes and onions as they cooked. 




The chicken was accompanied by a side of beautiful fresh spinach, and, in a lovely extra touch a salad of tomatoes and avocados with a lemon dressing. I was also quite happy to see that there were two chickens roasted. Not only did this mean that Bertie got some nice chicken liver, but it also signaled to me that there’d be extra chicken to make the incredible chicken-walnut paste which I love so much. I usually only get that treat at our annual Valentine’s Day tea. But, several months of hinting and outright begging got me an early taste. I love that stuff—it’s a perfect blend of flavors made even richer by the taste of roasted walnuts and cognac. 




The meal ended with some lovely walnut and brown sugar pound cake—but not just the usual loaf. No, no. My mother made miniature cakes, and, then, miniature miniature cakes which were really adorable—and tasty—especially when served with fresh berries and whipped cream. But, so the cake wouldn’t be lonely, my mother also made homemade brown sugar ice cream. A lovely, mellow sweet ice cream, this was a delightful conclusion to a wonderful meal. 






I’m still full.
